There are several charter services out of Port Canaveral, and I assume there's some that go out of Sebastian inlet as well... or if you want to travel all the way up to Ponce Inlet, there's some up there, too...

(either run a search on whichever fishing charters or even step into a few hotel lobbies, tourist information centers, etc, they usually have fliers or cards for different charter companies...)

Keep in mind, while a trip on a party boat style charter will cost less money, catch seems to be better on smaller boats where you pay more. (don't let them rule out inshore charters, either... there's nice variety in the Lagoon, and you won't pay quite as much to charter inland since there won't be as much gas being burnt)

Have fun!
