The vital organs of the fish are down near the bottom and behind the mouth of the fish so those are still intact. My guess is the fish won't live very long. If nothing else it will die slowly from some kind of infection since it no longer has its skin, scales and slime coat to protect it.

OH that is WEIRD!! I guess because they didn't cut any veins or organs
